Ingredients
  

  • 2 cups cooked and chilled rice (preferably day-old jasmine rice)
  • 1 lb chicken breast or thighs, diced
  • 2 tbsp butter
  • 2 tbsp vegetable oil (or sesame oil for extra flavor)
  • 2 eggs, beaten
  • 1 cup mixed vegetables (peas, carrots, corn, etc.)
  • 4 green onions, sliced
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce (optional for richness)
  • 1 tbsp sesame oil
  • 1–2 tsp minced garlic
  • Salt and pepper, to taste

Method
 

  1. Make sure the rice is cold and separated — freshly cooked rice will get mushy.
  2. Dice the chicken and season lightly with salt and pepper.
    Have your sauces measured and ready — things move fast on the griddle!
  3. 2️⃣ Heat the Blackstone Griddle:
    Preheat your griddle to medium-high heat (around 400°F).
    Add a mix of butter and oil to keep everything from sticking.
  4. 3️⃣ Cook the Chicken:
    Sauté the chicken on one side of the griddle until golden brown and cooked through (about 5–7 minutes).
    Add a bit of soy sauce and a touch of butter for extra flavor.
    Push cooked chicken to one side to keep warm.

    On another section of the griddle, add a little more oil.
