Mix dry ingredients: In a large bowl, whisk together flour, baking powder, sugar, and salt.
Add wet ingredients: In another bowl, whisk together milk, egg, melted butter, and vanilla.
Combine: Pour wet ingredients into dry ingredients. Gently whisk until just combined — small lumps are okay (don’t overmix, or pancakes won’t be fluffy).
Rest the batter (optional but important): Let the batter sit for 5–10 minutes. This helps it thicken and rise better.
Cook the pancakes:Heat a nonstick skillet or griddle over medium heat and grease lightly with butter.Pour ¼ cup batter per pancake. Cook until bubbles form on top and edges look set (about 2 minutes). Flip and cook 1–2 more minutes until golden brown.
Serve warm:Stack them high and top with maple syrup, butter, fresh berries, or even chocolate chips!
