Ingredients
  

Pasta
  • 1 lb elbow macaroni
  • Salt (for boiling water)

Cheese Sauce

  • 4 tbsp butter
  • 1 can (12 oz) evaporated milk
  • 1 cup heavy cream
  • 2 large eggs, beaten
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp seasoned salt
  • ½ tsp black pepper
  • ½ tsp paprika

Cheese Blend

  • 2 cups sharp cheddar cheese, shredded
  • 1½ cups Colby Jack cheese, shredded
  • 1 cup Mozzarella cheese, shredded
  • ½ cup Smoked Gouda (optional but very Darius-style)

Method
 

  1. Cook the pasta: Boil macaroni in heavily salted water until just al dente. Drain and set aside.
  2. Preheat oven: Preheat oven to 375°F (190°C). Butter a 9x13-inch baking dish.
  3. Make the creamy base: In a large bowl, whisk together evaporated milk, heavy cream, beaten eggs, melted butter, and seasonings.
  4. Layer the mac and cheese: Add pasta to the baking dish. Pour the milk mixture over the noodles and gently stir.
  5. Add the cheese: Fold in half of the cheese blend. Sprinkle the remaining cheese evenly on top.
  6. Bake: Bake uncovered for 35–40 minutes, until bubbly and golden brown on top.
  7. Rest & serve: Let rest for 10 minutes before serving for the creamiest texture.
